Friendship Soup In A Jar

Okay this one has not been in our Newsletter because it is too long but it is worth being on the website. Your friends and family will love you for this! A soup mix in a jar recipe you can give out as gifts. 
Prep Time: approx. 30 Minutes. Cook Time: approx. 1 Hour 30 Minutes.  Ready in: approx. 2 Hours.  Makes 16 servings.

For Each Jar:

1/2 cup dry split peas
1/3 cup beef bouillon granules
1/4 cup pearl barley
1/2 cup dry lentils
1/4 cup dried onion flakes
2 teaspoons dried Italian seasonings
1/2 cup uncooked long-grain white rice
2 bay leaves
1/2 cup uncooked small macaroni

1. In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap or baggie and place in the top of the jar. Seal tightly.

2. Attach a label to the jar with the following instructions:


ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper and garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, and 3 quarts water (12 cups).

TO PREPARE SOUP: Remove macaroni from top of jar, and set aside. In a large pot over medium heat, brown beef and season with pepper and garlic powder to taste; drain excess fat.  Add water and soup mix.  Bring to a boil, and then reduce heat to low.  Cover and simmer for 1 hour. Add diced tomatoes and stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.   Makes 16 servings.
