Herb-Roasted Potatoes

6 medium red-skin potatoes (about 2 lbs) cut into chunks
5 Tblsp. Grey Poupon Dijon mustard
1/2 tsp. Italian seasoning
2 Tblsp. olive oil
1 clove garlic, chopped                                           

Mix all ingredients except potatoes in small bowl.  Place cut potatoes in lightly greased 13x9x2 inch baking pan or on shallow baking sheet; toss with mustard mixture.  Bake at 425 for 35 to 40 minutes or until potatoes are fork tender, stirring occasionally.  Makes 4 servings.
