Super Simple Baked Pancake

2 large eggs, beaten lightly
Pinch of salt
1/2 cup milk
1/8 teaspoon vanilla extract
1/2 cup all-purpose flour, sifted
Pinch of ground nutmeg
1 tablespoon unsalted butter
Garnish: powdered sugar

Preheat oven to 425 degrees.  In a medium bowl, whisk together eggs, salt, milk, vanilla, sifted flour and nutmeg until smooth.

 

Melt butter in a 10-inch cast iron skillet over medium heat.  Pour batter into pan.  Place in oven and bake uncovered for 10 to 12 minutes until pancake is puffed and edges are brown.  Sprinkle with powdered sugar and serve immediately.

Pound chicken breast to an even thickness (about 1/2 inch) and place in a shallow baking pan.  In a small bowl, mix lime juice, cilantro, garlic, honey, olive oil, salt and pepper.  Pour over chicken and turn pieces to coat evenly.  Cover and chill at least 30 minutes or over night.

Lay chicken on a grill over medium heat (you can hold your hand over the surface only 4-5 seconds) and cook, turning once, until no longer pink in the center (about 4-6 minutes per side.)
