Tequila Lime Grilled Chicken
2 teaspoons grated lime zest
Mix all ingredients in shallow glass or plastic dish or ziplock bag. Add 1 to 1 1/2 pounds boneless *chicken, pork, fish or seafood; turn to coat with marinade. Cover or seal bag and refrigerate at least 30 minutes BUT no longer than 24 hours.
Makes about 2/3 cup marinade.
Remove meat from marinade; discard marinade. **Grill meat as desired - sprinkle a little cilantro on top for garnish.
** For Chicken Breast - Flatten each breast to 1/4 inch thickness between sheets of plastic wrap or waxed paper.
