Tortellini Soup Cooked in a Crock Pot

1  bag frozen tortellini (approximately 1 lb.)
1  small bag fresh spinach - de-stemmed

3  cans Italian style diced tomatoes

4  cups vegetable broth

8  oz. block cream cheese - at room tempture - cut into small chucks

Except for the tortellini - Put all the above in a crock pot and stir to combine.  Add tortellini and cook on low for 5-6 hours. Serve and enjoy!   

(Note: you can substitute the fresh spinach with a thawed 12 oz package of frozen cut leaf spinach.)
