Zucchini Bread/Cake

3 large eggs 
1 cup cooking oil 
2 cups sugar
1 Tblsp vanilla extract
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
3 cups flour
2 tsp cinnamon, ground
2 cup zucchini, grated
1/2 cup walnut, chopped
1 cup raisins, seedless

Combine eggs, oil, sugar, vanilla and blend thoroughly. Mix dry ingredients together and then add to egg and oil mixture—blend well.  Stir in grated zucchini, raisins and chopped nuts. Bake in 2 greased and floured loaf pans or a bundt pan at 325° for 60-70 minutes.  Check doneness by inserting a pick in the center and it's done when it comes out clean.
